In my mind there are very few foods that won't benefit from the addition of some form of condiment. Growing up, my Mom persuaded my brother and me to eat broccoli by whipping up a homemade curry yogurt sauce. I would eat pretty much any vegetable she put in front of me if that sauce was nearby. I can eat my vegetables on their own now, but every once and a while I like to jazz things up a bit by creating my own dipping sauce. The recipe below is an all purpose sauce that is great with everything from grilled or roasted steak and chicken to poached fish, steamed veggies, roasted potatoes, french fries, and crab cakes and probably quite a few other foods that I have not even thought of yet. I substitute it anytime a mayonnaise based sauce would be used, such as an aoili or even a butter sauce like a hollandaise. The flavor reminds me a little of a classic creole remoulade, nice and tangy with just a little bit of heat. It will definitely get you to eat your broccoli.

Creamy Mustard Dipping Sauce Ingredients: 1/2 cup Crème fraiche (preferably) or sour cream 1/4 cup whole grain dijon mustard, such as Grey Poupon 2 teaspoons lemon juice 1/4 teaspoon ground cayenne pepper 1/4 teaspoon bottled hot sauce such as Tobasco or Frank's Red Hot kosher salt and fresh ground pepper to taste Mix all ingredients together and serve. The dip can be made in advance and refrigerated for up to two days before use. Serves 2-4 |
